How come? What would you do? What should I do? I'm leaning towards the blue cheese butter... maybe WITH the red wine guajillo sauce... I don't know. I am crazy. @Justice Beaver

I'm afraid to ever cook with you in real life cause then you'll realize I'm a fraud. Your sauce game is on point.

I would toss the filet in a cast iron skillet with some oil. Then cut a bulb of garlic in half, grab some thyme, throw some butter in the pan, baste the steak with the butter while it sears. Then I'd set the thyme on the garlic bulb, the steak on top, then finish in the oven.

i'm the fraud, believe me. That's what I was going to do with the steak and then top it with a sauce or the goat cheese (which is a bobby flay recipe so... yeah I'm not legit there). If I make steak frites, your technique is exactly what I do. Thyme 4 lyfe.

We had a breakfast meeting at work that didn't start till almost 11. Biscuits, French toast, eggs, bacon, sausage, and gravy. Then I went to Pei Wei with a friend for lunch but I took mine to go so dinner is settled. then when I got back I fixed another plate of eggs French toast and biscuit

I'm gonna get real crazy. Those sauces all sound really dope so I would make them all but keep them on the side. Then I would make salt and vinegar potato wedges. Bring water to a boil, enough to cover however many potatoes you are gonna use, and add vinegar (2 parts water 1 part vinegar). Take off the heat, cut the potatoes in wedges and soak the potatoes in the vinegar water for an hour. Then throw them on a baking sheet and into the oven, about 15 minutes per side to get them crunchy. Then dip those suckers into all your dope sauces.

That's brilliant! I am making roasted potatoes tonight, but I am definitely going to make these for the superbowl. Where did you get this technique? It seems very interesting. Question--do you think blue cheese and butter whipped together would clash with the red wine guajillo sauce? I'm worried about that. If you do think they clash, what do you think is the better topping?

I do think that maybe the two tastes wouldn't really compliment each other. I say you make the guajillo sauce for sure though because I want chiles in every meal. The bleu cheese butter though is guaranteed to be fantastic.

And I'm sure that I'm not the first person to come up with the salt and vinegar wedges idea but for like a hot minute I really wanted to make my own giardiniera so I was looking at all these pickling recipes and trying to do a bunch with like cauliflower and carrots and I was like I bet potatoes would retain this flavor pretty well and I could make french fries with malt vinegar but not have my entire apartment smell like malt vinegar!

I made some red sauce yesterday with some ground beef I needed to use up, along with some red cabbage and broccoli. threw a little brown sugar in with the meat, a tiny bit of red pepper for some kick, and a can of tomato sauce, turned out pretty good, maybe a little too sweet.

last week I bought pizza rolls and put shredded gruyere on top of them
I don't know where that falls on the fancy scale, but it was fairly tasty.
