Disclaimer - most of you won’t pick gumbo but imo that’s cause you’ve never had it in Nawlins. I have never found sufficient gumbo outside the swamps of Louisiana. Places either try to make it too fancy or take shortcuts rather than making it from scratch starting with a slow cooked roux, & the flavors don’t assimilate nearly as well

Jambalaya is definitely more accessible outside NOLA and more places outside NOLA actually do it well

I'm licking the boot pretty good today. We have the 4th off but I'm working anyway because frankly who has time to get anything actually done. Yummy yummy boot I'm not ok

 

Im the opposite, fuck the fourth I wish my job wasn’t closed and I could make a few hundred dollars off people trying to see fireworks like I could at my last 2 restaurant jobs

I actually really need the money too cause recording is expensive as a motherfucker and we’re almost done. My job’s closed today and next Tuesday so that’s two shifts I’m losing :(

But if I can get through this recording process without selling my bass gear or my extra snare drum that’s a huge win.

The extra snare will be the first to go if I have to sell something, but I love having the contrast between that huge sounding punk / hard rock snare and my more sensitive indie/alternative friendly one. But i can at least buy that again cause it’s a very popular industry-standard snare drum, and I at least have another great snare.

It would be pretty impossible to replace the bass amp @spiffa0 took me to go get a couple years ago and it’s the only bass stuff I own. Thing cost me $1500 and that was a DEAL, it was also the only damn one I could find on the east coast cause they only produced them for the UK market. It’s basically the best tube bass amp that’s not an Ampeg and is not custom built for thousands more.
