Well, to me the message is more so “if you’re gonna do food then do it for real - invest in it, be good at it, and be responsible about holding yourself to the highest standards of cleanliness, quality and service. it’s a huge responsibility”

 

bars should have one food and it should be prepared by one very grumpy cook in what used to be a closet.

 

It’s better for bars to not do food, than to be fuckin gross about it and make shit in obviously wrong ways to cut costs and take shortcuts

 

i have bad news for you about every restaurant in existence

 

I’d honestly never want to run a restaurant no matter how much I got paid, because of how huge of a responsibility it is

for a lot of reasons -
1) how much labor has to be invested into cleaning alone,
2) how many people and intense personalities you have to manage in a stressful environment that brings out the worst in everyone,
3) how much a single viral bad review can tank your business for months, and how easily customers can lie about how awful you were if they didn’t get their way
4) how many legal liabilities you have especially when it comes to people getting sick or being allergic to something,
5) how hard it is to do everything right but still meet profit margins
6) how sensitive you are to food costs and inflation, which is constantly getting worse

I hate that most restaurant managers are fuckin assholes but I also get it because they are just shoveling shit for 70-100 hours a week. I know it’s just food but it can be a borderline traumatizing job

 

nah give me a dirty bar with some cook that legit doesn't know what washing your hands means, you'll get the best wings ever from a place like that

 

shit when I worked at chipotle we cleaned the fuck out of everything and they still killed people with their food

 

I genuinely believe we could do a lot of good for America if we just make buying or opening a bar 100x harder.

I’m glad we’ve reached that point where we’ve stopped trying to pretend we should be “fair on both sides”

I’m definitely not praising the DNC, in an ideal world we could do a lot better than those chumps being our only line of defense (and many of them being in cahoots with the same exploitative goals, just with different strategies)

But you just have to be willfully ignorant to see our political system as two valid arguments that just come down to “preference” duking it out lol

 

Like one of them is posturing and pretending to say the right things, the other one is just fuckin openly bullshit lol. How are half of us so dumb that we don’t even need to be “tricked” and we just eat up blatant falsehoods and straw man arguments

 

I have a concept for a cocktail bar I would open if I was ever stupid rich

 

cocktail bars are hella good except when the cocktails are $17

 

I’m a man of the people I drink beer

 

I would go to expensive cocktail bars more often if I was loaded

to me it really would be about the culinary experience and not getting drunk. Like if I had that tech job salary & could easily blow $40 without batting an eye the way my parents do, sure I’d spend that on two super fancy cocktails + tip for the experience

 

That’s why I settle for craft beer because I can’t afford to be a wino or a cocktail / liquor aficionado lol. I do know a fair amount of stuff about all that from being in restaurants…. but it would be dope to be able to experience that for myself on my own time and not at work

 

Unfortunately I try not to spend more than around $40 on myself ANYWHERE unless it’s concert / music gear related hahah. That hobby is already expensive for me, while it’s worth it it does definitely limit my ability spend money on other material things

 

Just went to the craziest brewery I've ever been to yesterday called Wiley Roots. Some of this stuff is insane
