as far as listing goes:
Sharp Cheddar is number one, easily the most versatile cheese
Colby/Colby Jack. partial to this as it was created in my homeland, and also was a nickname of mine.
Bleu, Feta, and Goat cheese are all pretty equal in my eyes. great to add a little flavor to many savory dishes
Parmesan/Mozzarella/Italian cheese in general
all cheeses have their place

I feel you. I don't like velveeta mac and cheese. My mac and cheese has a pound of muenster and a pound of colby jack. Get the velveeta away. I think it's the definitive cheese for a cheesesteak though. Provolone just isn't as good.

 

@coleslawed I'm actually a big fan of head cheese although it should just be called a terrine so as not to scare people.

@Ken You gotta use real cheese whiz for cheessteaks.
