it doesnt fall off on top because theres a membrane on the inside of a pork rib

Some falling off the tips of the top isn't the same thing. if you pick those up the meat on the sides and top will stay attached and you can bite it off easily. The bone shouldn't be totally clean when you take the meat off, is what I'm saying. If you can literally gum the meat off without using teeth that isn't good.

the ribs I got were just a bit tough in the most classical sense that anyone would understand. they tasted good though.
