Yep. Done in a box (either commercial or homemade) with hot coals on top and sometimes the bottom. The meat is injected with a sour orange/garlic marinade. It's unreal and I love Carolina pork. I especially love the NC vinegar and pepper bbq sauces, but this is next level imo.
