You're missing out on eggs benedict

American omelettes have the eggs cooked all the way through until they're "hard" with relatively large curds and then it's folded in half

French omelettes are just barely cooked until the outside layer is cooked through but has no brown anywhere and then it's rolled up with the inside still runny and the curds are very small from being constantly agitated during the cooking.
