    I’ve taken to cooking dried beans. It’s simpler than I thought it would be and you get way more bang for your buck. I soak for 24 hours and simmer for about an hour and I have beans for days. I used to buy canned beans but I stopped cause dried beans are cheaper and lots of canned beans use bacon or other meat flavorings.

    yeah I nailed the 24 hr soak, but def skipped the simmering step lol

    I've made some pretty bomb recipes over this last week. Black bean burgers, vegan vegetable fried rice with tofu, 8(9) ingredient vegi lasagna. I've actually be super excited to cook which I never really got the desire to do before. Cooking before was always met with a shrug. Got all those recipes from www.minimalistbaker.com.

    I do now seem to be hungry more often. Wanting to snack more and so on. Been filling the between breakfast/lunch void with a Larabar, and the lunch/dinner void with whatever is handy around the house(whole food obv). Think I need to add some more/different protein in there somewhere to(maybe?).


    I might starting making my own almond milk as well. So that's something.

    Freaking love minimalist baker, pretty much every dinner I make is from that website--love that sweet potato buddha bowl recipe she has on there. I'd like to hear how making almond milk goes, if you save any money or not. I've thought about making oat milk maybe, since it seems like that would be the most cost-effective. Plus that would cut down on plastic usage...sucks that some of the milk containers can't be recycled.

    Funny that everyone has been talking about cooking beans...that's something I'm going to try this week. Planning on using a rice cooker so we'll see how those turn out, and it seems like another good way to save money/reduce packaging.

    The reason I went plant based was to hopefully fix my achilles tendinitis that's plagued me since January(so I can run without injuring myself more/again). Now trying to make sure I get enough vitamin C and the right amino acids to help my body rebuild collagen. Drinking bone broth is out of the question if I want to avoid animal products and it sounds gross when you read the descriptions("meat water"). Fun times.

    I’m a pretty analytical person, but you might have me beat haha. I suppose an injury will do that. I just vary up my grains, starches, fruits, legumes, nuts, and veggies. I don’t think too much about it. When in doubt, eat boring. I’m not sure if going plant based will cure your achilles, but I could see it maybe helping. I’m definitely not a doctor.

    I don’t think it will fix it either in and of itself. However, I’m on board with the science behind the body’s natural healing abilities when going plant based and NOT feeding yourself garbage. So that’s my thing I guess. (Been to the Doc and physical therapy and I’m just so impatient with the recovery speed haha).

    I’m def not one to analysis food intake in the calories, grams, and so on aspect. Probably won’t. I just don’t care lol.

    Yeah, I think you're on the right track there. In terms of an achilles injury, I would think maybe going to PT or if you know what to do on your own, you can build it back up some. Not sure how serious the injury is, but I have heard conflicting thoughts on that type of injury.

    i've made pho which took a couple of hours. i simmered some veggies for a few hours to get the base then simmering the roasted aromatics for another level of flavor. the taste wasn't quite right so i might try it again. figuring out how to smoke things like bbq is my next dream. i've been wanting to smoke mushrooms for a pulled 'pork' bbq sandwich like this dude. i have a weber charcoal grill, but i dont want the smoke to float up to the neighbor's windows upstairs so that's been on the back burner

    Yeah been to PT and all they really did was the ultrasound and ion treatment. Told me to stretch and I was the one to recommend myself eccentric calf raises. $330 later....... blarg. Doing those excerises and stretches on my own still though(inconstitantly sometimes). I still may do a one time but of some organic bone broth to speed things along and then end it at that. Not going to stress over drinking it or not; just going to do it.

    Tonight for dinner it’s black bean, quinoa and tofu(maybe) burritos with some of the leftover veggies I have to use up on Ezekiel 4:9 sprouted grain tortillas.

    Things are going well with my new eating lifestyle. Caved on 2 cupcakes from a favorite local bakery the other day though. Wife shouldn't have let me see them when she brought them home haha. They were delicious.

    Made I think my favorite meal so far. Sweet Potato and chickpea salad Sweet Potato Chickpea Salad | Minimalist Baker Recipes The Hummus/dill sauce is the key.

    Weighed myself and I dropped some more weight; and I don't want to loose weight as I'm thin anyway.. Immediately slammed some organic bread and peanut butter with dates on top. I'm not even being aerobic right now aside from swimming 1-2 times a week. Going to make sure I eat more healthy fats. Doing gym today to hopefully work toward building some muscle. Have not been motivated for that at all. BTW, IDK what I thought a "date" was, but I had some medjool dates for the first time and I'm in love. Practically candy.

    Think I'm going to try the Beyond Meat burger tonight or tomorrow. Its not USDA Organic like I'm going for, but still curious. Eating non organic some time to time while still being mindful of what I eat will be fine.

    What's everyone's favorite Greek yogurt alternative? I need to use some for this bagel recipe, made it last week with regular coconut yogurt and it was decent but not as good as it would be with the thicker kind.

    Yeah that thread is ridiculous. Guess I better divorce my wife cause she’s not vegan and I choose to be 8 years into marriage. “By wife it’s been a good run. Sorry you chose cheese over me”
