Mexico City is so cool. Im scared as hell to go to Mexico now though.

 

Media Noche was my go to. They also had this dope guava pulled pork. Haven't been to town in a few years. Need to go back.

I think our understandings are inherently different because of where we live. Up north, I think of tex-mex as Chilis, On the Border, Chi-Chi's (does that still exist?), chipotle, etc. Basically, chain Mexican food in this country. Normally with lots of yellow cheese, cumin, and beef. I'm jealous of your food options and I'm sure they surpass the tex-mex I can find locally. So for me, there's a clear divider between what's tex-mex and dishes I'd expect to actually find in Mexico. But for you, it sounds like you have so many options with lots of varying degrees, that definitions become blurred. Sounds like my understanding needs to evolve!

For me, and a lot of the country, that's what tex-mex is. Sounds like you have it much better than we do! (Although my hoagies and pizza are prime, so I don't know if I'd trade, haha).

 

It took a long time for me to figure out that Chili's is considered Tex-Mex in other places hahahaha I never grew up thinking of it as Tex-Mex

I always just thought of it as a typical American food place
