    When I get a good duck somewhere at some place serious, its super fucking hard to beat. But 70% of the rest of the time its garbage. Very hard to prepare. And their flavor varies wildly across different species apparently.

    I couldnt bring myself to get a Kangaroo burger at Twisted Root. I googled the meat and it looks so gummy lol

    Yeah different species taste does vary a lot. I usually confit the legs and sous vide the breasts. Sous vide duck breast with a quick sear in a cast iron pan is fantastic. Anything orange or cherry makes for a great flavor pairing too.

    Probably just the you don't know how much it means to me part. I love it and started crying. I was trying to not sound like a psycho on the video. @lobstervegan It shocked me too bc we were actually at B and BW and I was talking about how much I loved the Snowflakes and Cashmere smell but I was too broke to buy it so I was like..oh my god. haha I just hope you two know you mean the world to me and I'm trying to set aside monies to come visit.
