There's a rum bar in KOP called Paladar. The food is just okay (although you can get smoked salmon in your guacamole and that's really good), but the drinks are incredible. They have a jalapeño paloma and a charred pineapple caipirinha. Seems to be right up your alley, so to speak.

 

that does sound good. I was at this Indian restaurant in jersey that has a good cocktail bar next door and we were getting pre-dinner drinks.
