The perception of what Italian food is via the American lens and what Italian food in Italy is really wild and stark. That was one of the things I picked up in my watching the Stanley Tucci show on CNN.

Except replace the steak with pasta and the water with a delicious sauce of my choosing.

 

How many cultures use pasta as an identifier beyond Italy, vs how many have distinctive potato dishes, let alone the variety of breads and rices around the world?

This isn’t anti-Italy; I LOVE good pasta. But I want a full spread on the board of culinary choices.

 

I mean Thai food initially came to my mind but then most of their noodle dishes are rice based so I don't even count that as "pasta" in this discussion. I think rice in non noodle form is more prevalent than the noodle.
