My aunt (RIP) got fired from Loblaws (Canadian supermarket chain) years ago for taking home a perfectly good, ready to eat whole chicken she was instructed to throw out. She said they threw out at least 6-8 of them every day

Is there some legal loophole where, if people ate that thrown out food and got sick, that they could potentially sue the food market that threw out that food?

Working at Regal theatres as a teenage, can't tell you how many times I saw employees get fired for eating hot dogs left on the roller after the last showing.

nah it's 100% a profits-motivated thing. They probably think that if they allow workers to take home unsold food, or give unsold food to poor people, it will encourage workers to, for example, make extra pizzas on purpose so there will always be leftovers, which will then hurt the company's bottom line (however miniscule that impact might be is irrelevant). It's pure greed and disregard for the people who could actually use that food.

I always heard about this as a kid, but it’s never happened and is completely made up to justify waste and greed.

This is what they told me when I worked at Starbucks. It did not stop me from taking home the muffins.
