    I had a random steak in the fridge I needed to cook so ended up reverse searing it which is completely new to me. I usually just grill them over charcoal. Holy crap I've been missing out. Was just a basic strip steak from aldi seasoned with salt, pepper and a dash of smokey paprika and it turned out better than ones I've had at nice steakhouses. Perfectly even color throughout (I usually like med-rare closer to the medium side of things), tender, and juicy as fuck with a nice crust on the outside. This might be my go to method from now on.

    hell yeah, love reverse searing for steaks/roasts/chops. if you're able to plan ahead next time, season it a day or two before and leave it uncovered in the fridge on a rack. it'll dry out the surface even more for an even better crust, plus it's super easy to just turn on the oven and grab it from the fridge and throw it in.

    Yeah this was completely on a whim so I didn't have the time to let it sit this time but I'll definitely plan ahead next time and season it like a day before. Even just letting it sit for 30 minutes with salt on helped a small amount.

    Oven baked wings with a hoisin/soy glaze. I added baking powder to the dry rub and it really made them super crispy.

    Salmon with elote style corn, Szechuan green beans, and ancho chili butter. Also had a half dozen littlenecks on the half shell. I need to eat raw clams more often, I almost prefer them to oysters.
