something about sous vide i just cannot get behind. perhaps its the 'giving my food a warm bath' part of it.

I don’t like it because a big chunk of the flavor of cooked food comes from caramelizing it on the outside and you get none of that with sous vide

Like I’ve had sous vide pork before and even though the temp was perfect, the flavor of the fat did not circulate through the meat, just felt like chewing wet rubber

yes it does suck if you actually try to act like it’s to honor the native Americans; that’s shitty and backhanded and revisionist as fuck and it continues the ongoing erasure of their communities and their ancestors experiences

But if it’s literally just an excuse to eat and watch football with people that you love and you don’t sit there and try to honor the Pilgrims or force yourself to be around family you hate, it’s great lol

 

The best holidays are the ones where the purpose is to be left alone entirely and not need to deal with other people’s bullshit. We need more holidays like that.
