    I wanted to bake cookies but forgot to take the butter out to room temperature and I feel like microwaving it is never the same

    Edit: okay I baked stuff. I feel like i graduated up to a point where my baking no longer tastes awful but it's not pretty. I wanted my bf to take the treats when he sees his parents for Xmas but I'm too self conscious lol. I made strawberry thumbprint cookies. The first one turned out good but then apparently I just kept subtly using more and more dough each cookie and they got huge oops. Then I made red and green m&ms with chocolate chips which turned out okay but the melty chocolate chips kinda made a big mess on everything and got everywhere

    I'm attempting baking again. Lemon thyme shortbread cookies. I think I rolled the dough out too thick. Cookies are taking forever to bake. Worried they won't bake with enough time to cook and do the icing tonight. Idk how much 1/4 inch is like wtf.

    I will say with the holiday baking, I'm finding more successes than misses which is progress for me!

    Edit: I think they're tasty. Dont think my bf likes them, oop.

    Made vegan chili in the slow cooker today, by far my best batch to date. I added a cocoa powder and fine ground coffee in addition to the bourbon and beer I usually use. Makes a world of difference.

    I did a week of Hungry Root and everything has been so easy and tasty I'm def doing it again. Normally I don't think meal kits are worth the price, but this one meets me where I'm at. I like that it's made up of both pre-assembled stuff and a few easy things I have to prepare. I tried hello fresh in the past and Hungry Root def meets me more where im at. I tried some other one in the past where it was all pre-packaged and just needed to be heated up but the meals sucked.

    The other day it was a burger salad type thing and the black beans/corn/seasoning/whatever else was in there was pre-mixed and I just had to add greens and cook up the beyond burger with whatever spices i wanted. Then cause I'm usually rushing for lunch and breakfast they sent a breakfast burrito and green Chile tamale and both were very good. Also gave me a lil mini pumpkin cheesecake for dessert and it was great too.

    It's adding variety and makes me look forward to eating the next day instead of dreading planning and making meals. It's still more expensive than I'd like but I'm giving myself the grace to splurge if it improves other areas of my life. Trying to see my nutrition as an investment. The overall goal is me making my meals with fresh, whole ingredients but having a mixture of pre-prepared and easy to cook things has been perfect for now.

  6. My work has been giving me GH credit for working overtime. It’s nice, but I’m bad at choosing heathy options. Been eating a lot of gyros, burritos, tacos, and fries recently.

    I wanted to make a lemon loaf/bread but I couldn't find my loaf pan and refused to buy a new one because I know one is here somewhere!! But ended up doing a sort of lemon cake without frosting type thing instead and it is pretty good! I'm proud that I got the bake time right to account for the different size pan.

    I just got some Kewpie mayo yesterday for my first attempt at deviled eggs (we killed it, they came out great) and this stuff rocks. Probably the best mayo I've tried. And the packaging is nice. Love having a squeeze bottle instead of having to use a knife to get the mayo out.

    Made some tomato soup (just onion, crushed tomato, chicken stock, butter, salt, pepper). And then cooked up some more grilled cheese using mayo on the outside and cheddar / gruyere combo. Never made tomato soup before was pretty easy and tastes good. I think next time I'd want to make it creamier with some heavy cream or something.

    Went to Gordon Ramsay Steak in Atlantic City last night. Had to get the classics beef Wellington and sticky toffee pudding. So expensive but SO good. Definitely worth it.

    Got a sous vide and cooked these beauties to perfection. Also made some dutchess potatoes. The jury is out on if they were worth the effort or not. Basically mashed potatoes piped and baked. They were better as leftovers the next day in the air fryer.

    Excuse the eating situation. Couch eating sometimes happens.
