That sounds awesome. How much broth did you use?

  2. Maybe like 1/2 cup or 2/3, just enough to soak into the kale and potatoes to make them soft

Nice! I will have to try that sometime. The beauty of skillet recipes like yours is that you can pretty much use whatever you have laying around that you need to use up. Make a side of rice or pasta if you'd like. The flexibility is great.

  4. Sometimes in the next few days, I'll try that recipe and get back to you. I want to change up my routine so bad

  6. That's so nice of you, thanks ! I don't even know what I like to eat best. I'm in the process of becoming vegan, and with that comes one silly thought : my diet is anything but diverse. My parents (especially my dad) are the kind to mostly eat basic omnivore meals, and I got sick of it at one point. There's such a whole food universe to discover, and I don't know where to start I guess ?

What's the best vegan mayo substitute?

The three store-bought brands I have had and like are Earth Balance Mindful Mayo, Hampton Creek Just Mayo, and Follow Your Heart Veganaise. The last one is probably the most popular one that I have seen in terms of availability and flavors.

My girlfriend and I are trying veganism for the month of June. More than likely will stick with it for awhile, I think. We've tried paleo before because she has stomach senstitivies to food, and veganism is so much easier.

Glad you both are giving it a chance! Hopefully you stick with it. Biggest pieces of advice from me would be to not feel guilty if you aren't perfect right away. Everyone cheats in the beginning. Secondly, go through with your girlfriend and make a list of foods that are vegan that you like and make meals around those things. Branch out as curiosity strikes. Worst thing you want to do is buy a bunch of new foods you may not like or want to fix. It's a lot easier when you already like the food. Lastly, for cheat/junk food: Spicy Sweet Chili Doritos (purple bag)!

  12. Another thing I've found for success is, don't try to make every meal a vegan version of a normal meat/dairy meal. Embrace fruits and vegetables and nuts and grains for what they are and enjoy dishes that revolve around those. Not every meal needs to be "vegan mac n cheese", "vegan lasagna" etc.

Not to say I don't eat veggie burgers like every other day, but I'm just saying.

That's a very good point popdisaster, and the point I was trying to get across with the list of vegan foods. To start, just eat foods you know you like. If you are eating healthy options, you will end up with more than enough protein (that all non-vegans worry about) and most of everything else you need. As you keep doing it you will notice what you're lacking and can make adjustments. I recommend nutritional yeast or supplements for B12. Definitely get nutritional yeast regardless. Stuff is good for you and super good.

This is great advice, for sure. My sister has been vegan for 3 years so I already have a lot of vegan meals I like from her sharing. Also, those are the only Doritos I like haha. I am not super picky, I've liked pretty much everything vegan and vegan substitute that I've tried!

Those are the best doritios, with or without vegan. The fact that they are technically vegan (not healthy) is amazing. That's one of the few cheat foods I always have around.

I couldn't find the Veganaise mayo substitute (or others) even tho it looked like Target carried it. The only vegan mayo I found was the Best Foods one and Just Mayo. I chose Just Mayo because it was cheaper and I got more in the container and I think it even had a longer shelf life.

Just Mayo is good so I don't think you will be disappointed. If you have a Whole Foods near by they will usually have some options. Glad you were able to find one though.

Also Dollar Tree carries Just Mayo so if you're lucky you can get a bunch for super cheap. but also idk why anyone would need so much mayo except for the principle

Next time I need to stop at dollar tree I'll see if they have it (just to look). I'm guessing it's a small container? I don't really like buying food from there anyhow. A lot of it is just expired, long past the expiration date, or about to expire.

yeah I've seen people post about finding the 8oz. size. Idk where that falls on their sizes though.

I have a big container (32oz I think??) and it was only under $4. It was that or a small squeeze bottle which only had the truffle and chipotle flavors on the shelf not the original.
