    dear diary: today Garrett destroyed my dreams of what genuine Italian food would be like when he told me that it tastes like the Olive Garden. I wonder what will happen tomorrow

    there are obvious exceptions (see: el gato e la vulpe in florence, which is an entirely different world), but as far as standard quality goes, about par.

    i can also go ahead and dash this, too: fettucini alfredo is an american dish they've since adopted because americans go to italy and expect to see it on a menu. it, along with spaghetti, are usually the two worst things on any menu.

    also a lot of american italian is influenced by southern italian cooking because the poor people from the south are the ones who immigrated to the states back in the day, except it's way less spicier than their food is currently (which is a shame). most of the places tourists visit are in the north, which is where OG gets most of their recipe influence, which also explains the dichotomy.

    i just really like italian food okay

    There's no such thing as Italian or Chinese food, it varies regionally based on what was traditionally available, if you were by water you are fish etc

    Italy has seventeen different regions, and Ian is very much correct. The region I spent most of my time in was known for gnocchi recipes and lots of ham (being kosher/allergic to pork was fun).

    Venice is known for a lot of squid ink pasta and delicacies. It's disturbing looking.

    olive oil sauces became my favorite, but they're very messy and hard to eat without ruining the shirt you're wearing
