I was thinking about an herb goat cheese spread for the top with a honey mustard lemon vinaigrette, but I think that's more suitable for a ribeye or strip steak... might make a blue cheese whipped butter topping or maybe a red wine guajillo chili sauce with some honey.... not really sure. Any ideas? I don't wanna go too crazy because these filets are spectacular.
