Most simply, noodling is fishing (I think only, but at least mostly, for catfish) with your bare hands.
You literally get your hand/arm into the fishes' mouths.

edit -- If you find yourself curious enough to Google for images, just know that sometimes noodlers' arms/hands get a little bloody.
