Therein lies the problem!

I would say that they are relatively straightforward thing that can be done well with relatively little effort, yet almost all places just pawn off a lazy, sub-par product. I would say that good bread that is fresh would be the foundation, and right off the bat most places just give you stale, generic bread. I would guess that most places that have a cult following or legendary status just get the basics right and do it well and consistently and don't cut the usual corners that 90% of places do.
