    The idea of an easy (though still delicious) entree and more intricate first few courses makes sense to me based on the last few years I've done this. I can let the beef braise all day, make a gravy on the side, etc... or with the crab cakes they can be formed and sitting in the fridge for a day so they really hold their shape... could even reverse-sear them too.

    It's cold, so a hearty dish is a really great option for this time of year. I love beef bourguignon. That sounds delightful.

    How many do you cook for?

    Usually five adults and one child. Can’t count my nephew as an eater yet, but maybe next year.

    I follow the same logic of wanting something that tastes special and incredible without making me slave all day when I want to be celebrating. My brother’s kitchen is really hard to cook in so I usually prepare it at home and then have it heat slowly while we do presents and stuff and only make the sides there. We’ve also done it Christmas Eve a few times to really keep the day itself stress free.

    Is yours a bigger group?

    I'm going to be at 10 or 11 adults total.

    Christmas eve definitely sounds easier than Christmas day! I took the whole day off from work, so that should be a big help.

    I’m lucky enough to have the full week off (except Friday, but whatever) so I can do plenty of prepping without missing anything. I’m a big fan of doing it Christmas Eve, but it’s based totally on what my brother’s family wants to do. Since they had kids they’ve usually wanted that night all to themselves. I’m sure once they’re older we’ll go back to the whole family being together overnight.
