My boss's boss posted this in the support chat and I'm so tempted to ask why every arm is white

 

if the meat falls off the bone then that means the ribs are overcooked shake

you want the meat to be tender and come away without much effort but the bone shouldn’t just pull out like a dust jacket off a book lol

 

if the meat is moist and falls off the bone it means it was done correctly unless all the people who win bbq competitions are wrong

also there really isnt any time overcooking with bbq but there is definitely temperature overcooking

I suspect the ribs I had needed to be done lower and slower

 

it falls off when its real tender tho.

When you bite a rib the meat shouldn’t all come off the bone at once, just the area you bit should come away. And the meat definitely shouldn’t fall right off the bone as you cut them apart or pick one up or whatever. That’s overcooked. ¯\_(ツ)_/¯
