    Ugh, existing is so exhausting. But I should probably do this more.

    This is my issue too. I come home from work and just don't wanna spend time cooking after all day working

    Haha, well... I don't cook that many amazing meals a week. Only a few. We eat out a lot. I also always buy a couple of things at the grocery store which help me take my meals up a notch really easily: stock, shallot, lemon, and some sort of fresh herb.

    So for tonight:

    We bought some prosciutto to snack on while we made a fettuccine dinner this past weekend, along with some white wine. So I already have that. And I'm going to microwave the green beans about halfway and finish them in a pan with some olive oil, salt & pepper. The chicken is coming out of my freezer (I know). When that's thawed, all I need to do is pan-sear it, then wrap it in prosciutto and top it with cheese and broil it for a couple minutes in a different dish. I'll start nuking the green beans when I put the chicken in the pan. When the chicken is broiling, I'll add some white wine, then stock, then lemon zest & herbs to the pan and let it reduce. And we're done!

    I find that always trying to cook the longest-cooking item first really helps. The timing is key on a weeknight. For this dinner, everything should be able to be cooked in about 20 minutes total. I don't really have any chopping or prep to do outside of a few really basic steps such as seasoning the chicken and measuring a few ingredients.

    I literally eat one meal a day and it’s tofu scramble every day or tofu scramble as breakfast tacos. That’s it. Every day.

    I'm going to rub my chicken in it before I wrap proscuitto around it, I think.

    However, I am a strong advocate of dipping bread into a jar of pesto.

    I love prosciutto so much ahh. That sounds delicious. Half the battle is definitely knowing cooking times/managing all the steps well and that comes from experience which I lack. All I can do is keep cooking lol, one day I'll get there.

    Also being able to look at what you have on hand and figuring a recipe around that is definitely a skill.

    once I had leftover mashed potatos, vodka sauce, grated cheese, and corn tortillas to try and make into a meal. it was awful. true story.

    Prosciutto is dangerous. I always buy some at the Italian market near my house. Sterling is maybe more obsessed with it than I am. Practice makes progress. I've made purple chicken and butter poached beef by accident before. NYT Cooking is a great resource for recipes.

    We like to make turkey tacos (sometimes grilled fish) a lot. Shrimp scampi. Chicken w/ a pan sauce (like what I posted earlier). Steak frites. Pan-seared salmon w/ veggies. Risotto (either with meat or vegetables). Good, dried pasta (or pre-made, refrigerated ravioli) with a simple tomato sauce can be made very quickly too. I can go into more detail about any of these if you like.

    It's definitely something I've gotten way better at the past few years. These days I'm only using recipes for things I haven't made before that I specifically want to try to make.
