    Seems like a moment when Veganism is becoming more popular than ever but the market isn't saturated yet. Could catch the wave just right. But yeah, huge risk.

  2. The vegan restaurants here are super busy all of the time, but I do think that's because there's only a small handful of them. I'd love to have a quick vegan sandwich shop to hit up though. They're mostly sit down restaurants right now.

    I often think how great this would be. There’s so many great vegan/vegetarian spots out there, but I’ve never encountered a legit quick sandwich shop. Not in Massachusetts at least.

    I live in the eastern part of the state, but I do love Northampton. I went to college out that way and interned for the music venues in Northampton. It’s been a few years since I’ve been out there, so maybe I should make a trip soon.

    I tried them for the first time last year at the vegan food truck festival im SAWA, and loved it.

    Dude it's fucking great, I tried 4 flavors last time I was there and liked 3 of them a lot. I literally got pints, wish they had more than 3 locations. The lavender one also pretty good but I recommend some toppings on it.

    Fresh Van Leeuwen is also good stuff, the ones in the supermarket are not even close and it kinda sucks.

    so my extended family has always been big animal lovers. in my family four of my cousins (including me) are vegan, two of my aunts are vegetarian, one cousin is vegetarian. and my one aunt works very closely with animal charities and dedicates a lot of her time to animals stuff which is cool. its kinda an unusual amount within one family considering but anyways my grandparents have always ate meat but my grandma is huge animal advocate and she called me for my birthday all excited to tell me she had decided to become vegetarian. at 86 years old she decided to change! she has one friend her age that is vegan and talks and invites her to different programs about it and she finally decided to give vegetarianism a go, which is so cool to hear. honestly through the actions of my family and her friend i think she noticed its very doable and more accessible than one thinks. i tell a lot of people through the action of being vegetarian/vegan alone they plant a lot of curiosity in people and its more affective than one realizes.

    The seitan I’ve had has been too tough and tofu is great but not a good meat substitute so imma go with option b, tempeh

    Any recommendations for vegetarian meals that take a long time to cook? The one thing I miss is cooking something like a roast that takes all day.

    Making authentic Indian curries is something that ideally you should take a long time over, the flavours get better the longer you cook.

    I did this a few months ago and it turned out great! I didn’t realize beans need to soak for hours ahead of time so it was quite the adventure. Well worth it.

    I majorly fucked up the re-hydrating beans process the first time I made chili :blank:
