at the cheese places in Holland they were explaining how “gouda” isnt a real cheese but the name of the old, and now gone, cheese market capital of the world.

what we know as “gouda” in the States is really a bastardized version of one of 20 or 30 diff cheeses in the Dutch cheese umbrella. they all have big long Dutch names.
